The Tri-Ply bottom prevents sugars from sticking or scorching, while the Stainless construction prevents acid wort interaction. This pot is designed to reduce boil overs by having a narrow diameter and high side wall. There's even a lower side indentation that, with the use of a false bottom, reduces the chance of particles and grains getting into your spigot chamber. If you are lucky enough to have never encountered a breached spigot chamber, then this feature may not yet resonate with you.
